Everyone loves a good pickle! J. Neff sent us this delicious authentic recipe for making green tomato pickle as their gran back in Southern Germany used to. (Gertrud Neff, Heidelberg)
Ingredients and preparation:
- Wash 3.5 kg green tomatoes and cut in fine slices
- Cover with vinegar overnight
- The next morning drain in a colander
- Bring to the boil 1.5kg granulated sugar and 1/4 litre white wine vinegar until sugar is dissolved
- Add the tomatoes, 1 stick of cinnamon and a few whole cloves
- Bring briefly to the boil (for about 1 minute)
- Cool until it is lukewarm, then stir in 1 tbs mustard
- Store in clean jars and seal
It’s great to see the green tomatoes from Ninewells Garden’s polytunnel that are left at the end of the season getting used to make a tasty pickle that will keep through winter.
