Geeta Lohana sent in this tasty courgette recipe using delicious natural ingredients – with great step by step photographs. Geeta helped grow the courgettes while volunteering at the garden, and we love to see how our produce gets used.
So, get cooking…
- 2-4 small courgettes, chopped
- 2 tomatoes, chopped
- parsley, chopped
Heat oil and add chopped courgettes to pan
After about 30 seconds add the chopped tomatoes and some salt.
Cook gently until ingredients have softened.
Add ground black pepper to taste, and sprinkle with chopped parsley.
Geeta suggests serving with rice and sliced cucumber.
(You could try couscous as an alternative, and a green salad on the side)
